Snow 2011

I was supposed to start a new job yesterday with a pharmaceutical company, instead we've been hunkered down at 3070 Lauren Parc. Today is day number two. We're going to have to get out of this house soon...

Aquarium with Baby Jack

We had a blast with baby Jack and Miss Catie at the aquarium last weekend. We'll have to do it again soon.

Lesson in Money Management

Wes gave Lucy a $20 gift card to Target for Christmas (among other things). At first I thought this was silly- a three year old is not going to understand a gift card, and maybe a bit lazy on his part. But, after he explained his intentions it turns out it was a well thought out gift. He wanted to demonstrate that items have a value and if you don't have that much money you can't buy the item. We went to Target and this is how it all went down.
Before we got there Wes explained that Lucy has $20 on the card so she could buy whatever she wanted that was not more than $20. As we went up and down the toy aisle she would point out things she wanted. The first item she pointed out was a Handy Manny something or other. I pointed out that it was $30 and that was more than $20 but then showed her another Handy Manny item that was less than $20. She decided to pass. On the second or third aisle she picked out this Horse- it was $19. After the horse was in the buggy we kept looking and when she saw something else we'd say- "ok you can have the kitty, but you have to put the horse back because you don't have enough money for both." Surprisingly, she always went back to the horse and there were no temper tantrums. Wes threw in the ram for good behavior. Lucy named the horse Rudolph.

It started with a Buckle

I read somewhere last year that you should learn something new and "different" every year to keep your mind young. My propensity for job changes ensures that I'll always be learning something new pharmacy related, but I wanted to learn something entirely different. I love to eat. I love to eat dessert specifically. Wes and I are novice foodies. He likes sauteing, grilling, etc. but much like Rachel Ray he has no interest in baking. Dessert and bread are my two favorite parts of the meal. I decided my new thing to learn would be baking.
Lucy and I went blueberry picking with a friend and came home with more blueberries than we knew what to do with. I looked up some recipes.
Blueberry Buckle

Homemade sugar cookies for every holiday
Went apple picking therefore, had to make apple pie. First attempt at pie crust. Lesson learned- don't over work the dough.
Banana pudding from scratch. First attempt at meringue. Here's something I learned about myself- I don't care what the science is behind it, I like to think of it as MAGIC.
I rely heavily on Southern Living. This is a sweet potato pie with a marshmallow meringue. This was probably the most labor intensive item so far as I had to cook the sweet potatoes, make the crust, the filling and the topping. Worth all the effort but next time I'll consider canned sweet potatoes.
Key lime pie number 1- homemade almond graham cracker crust and lime meringue
Key lime pie number 2- store bought crust (subpar) and homemade whipped cream topping

scones that I make semi-regularly on Sunday nights (flavors tried- cranberry orange, blueberry lemon, and cherry almond and lesson learned- if the recipe calls for you to "cut in butter" just use a flat cheese grater and grate the butter straight out of the refrigerator into the dry mix)
triple berry pie (best crust I've made yet)
red velvet cake (I didn't get to taste it but was told it was dry- in my defense I was having oven temperature issues)
apple/cherry galette- eh, it was ok
My co-workers have been forced to eat most of this because Wes isn't really into baked goods as previously mentioned. By feeding all of these things to my co-workers I've simultaneously learned how to bake and lose weight. If you read this whole post you're just trying to not do something you really need to do- go do it.
As a thanks I'll leave you with the result of the multiple key lime pies. A Paula Dean/ Southern Living Key Lime Pie Mash-up
Crust:
5 tablespoons melted butter
1.5 cups graham cracker crumbs
1/2 cup slivered almonds
combine the above and press into a 9 inch pie pan. Bake 5-10 minutes at 350 degrees. cool completely on wire rack
Filling:
1 (14oz) can sweetened condensed milk
1/2 cup key lime juice
1 teaspoon lime zest
2 eggs, separated
combine milk, lime juice and zest. blend in egg yolks. pour into crust. bake for 10-15 minutes until filling is set. cool completely.
Whipped cream:
1 cup heavy whipping cream
3 tablespoons powdered sugar
beat cream at high speed 2-3 minutes gradually adding sugar until soft peaks form. watch as it MAGICALLY becomes whipped cream. put it in the refrigerator for at least 1hr. spread on pie before serving.
Next up I shall learn how to make cheesecake.

Spider Girl

For her birthday Lucy got a trunk full of princess costumes. Haden got a trunk full of Marvel comic costumes. Lucy likes them both. It was her idea to put on the Spiderman costume and she didn't take it off for over an hour. This pose is what she did without any coaching when I told her I wanted to take Spider girl's picture. Uncle Lanko, are you in love or what?
Spider Girl and Wolverine. I'm still laughing- mostly because Spider Girl kept falling down and running into things because her pants were way too long.

Aquarium

We're members at the GA aquarium so we go fairly often. This trip gets a blog post though because we went with a friend of Lucy's and her mom and I actually got a decent-ish picture of Lucy and me together out of it. That never happens, therefore, it's blog worthy.
That and Lucy and Amelia are just really cute.

Snow (x2)

This is Georgia's first attempt at snow this year. It was less than an inch, yet Lucy insisted on gearing up and going outside to "play in the snow"
Not a good day for grilling. I don't know why this writing is being underlined and I have no idea how to stop it.
Second attempt at snow in Georgia was on Christmas Day believe it or not. We were in LaGrange that night and because I don't like it when snow comes to me, I had not packed any real snow clothes for myself or Lucy. I don't mind going too snow, I just don't want it finding me.
This face is: Mom, I love snow and I don't understand why you're making me play in it in these pathetically non-snow resistant garments? I'm calling DFCS.
So let's recap: four flakes of snow= entire snow suit
actual snow and below freezing temps= leggings and a fleece hat.
I rock.

Wocket

That Wocket is supposed to be in your pocket. He's doing his Bofa on the Sofa impression. Lucy thinks it needs work.

Christmas Day

The scene before Lucy descended the stairs. Why did no one turn on the Christmas tree lights?!
The stocking is as big as she is.
Everyone got TOMs. Mine were the only ones that fit.

Christmas Eve

T'was the night before christmas. So we got all dressed up and went to church for the christmas eve service. We let Lucy hold a lit candle. No one died.
She insisted that we take her picture with Gina Ballerina- a christmas gift from cousin Lindsey, Lewis and Margot. Gina Ballerina has been a huge hit.
Then we opened the wrapped presents under the tree. This gift was from Miss Bobbie (Lucy's babysitter). Lucy approved.
You can never go wrong with a crown and sequined slippers.
Then it was time for the Little Family Seafood Extravaganza! Lucy opted out of the seafood portion.
I did not opt out. Unpictured is the lobster tail that was still cooking. Mmmmmmmm.
Sprinkling reindeer food on the lawn.
I am so enjoying melding christmas traditions from Wes's family and mine to create our own family traditions for Lucy.

One Day, Two Birthdays

Haden turned three in Athens. We started with a little bouncing.
Then a little lunch with the birthday boy.

And of course there was cake.
Then, on to Reese's birthday party in Canton. It was Reese's big 01 and here she is impatiently waiting for her cake, and wondering why she was the only topless one at the party.
Reese's sister Maddie and Lucy are good buddies.
You'd be smiling like this too if you got cake twice in one day.
